The renowned Chinese restaurant Min Jiang was previously located at One-North and has recently relocated to Dempsey Hill. The new setting also brings a brand-new menu, while still retaining some of its signature dishes.

Designed by architect Ernesto Bedmar, the new space feels warm and cool at the same time, with rooftop windows that bring the outdoors into the interior. Frosted gold accents and light bamboo-wood furniture exude a rich sense of understated luxury.

The luxurious dim sum platter is a dish that awakens your taste buds. It features four uniquely creative items (two pieces of each) — minced meat with prawns and scallops, beautifully blue-pea truffle vegetables, crab meat with prawns and vegetables (shaped like a manta ray), and deep-fried glutinous rice crafted to resemble a perfect golden pumpkin. The chefs spend four hours simmering a rich Sri Lankan crab broth, within which lies a small parcel waiting to be unveiled. Inside the parcel are Australian abalone, finely chopped bamboo pith, and dried scallops, all covered with a delicate layer of egg white.

If you love Sichuan cuisine, this is a dish you must try. The chef marinates the deep-fried pork knuckle in water with Sichuan white pepper and black pepper salt for a full two days. This is followed by two hours of steaming and roasting, and another two-plus hours of baking. No wonder this dish is so popular — just thinking about it, you can already imagine how crispy the skin must be.

There’s a saying that “we all have a separate stomach for dessert”, and dining at Min Jiang should certainly end on a sweet note. Nothing reflects modern flair better than creative desserts paired with dry ice. Frozen blue-pea lemongrass jelly served with lemon ice hail and Malay cake accompanied by salted egg custard allows you to experience two flavours at once. The sweet-and-sour jelly dessert with bubble tea pearls forms a striking contrast with the Malay cake generously topped with salted egg paste.
